| Roasted Stuffed Butternut Squash by Irene Clothier |
This easy recipe is a great example of a satisfying vegetarian meal. It requires very few ingredients and is hearty but quite healthy, consisting of just cooking spray
and vitamin-packed vegetables. Roasted squash would be delicious with almost any sautéed vegetable stuffed in it. It will be just as good on the grill this summer!
Half of a butternut squash, seedy middle removed with a spoon.
Butter flavored cooking spray
Salt and pepper
1 cup sliced mushrooms
1 cup raw spinach (a couple of handfuls)
Preheat oven to 400 degrees. Place squash cut side up on baking sheet and add a light layer of cooking spray; season with salt and pepper. Bake on middle rack
for 40-45 minutes, until top and edges begin to brown, and squash is tender when pierced with a fork.
When squash is close to being done, heat a skillet over medium heat. Add cooking spray and mushrooms; sauté for two minutes until they begin to soften; fold in
spinach and stir to combine. Cook for an additional two minutes until spinach becomes wilted, but still bright green in color. Add mixture to the ‘dugout’ of the
squash. Serve immediately.
Serves one, but recipe can easily be doubled. Enjoy!
